Recipe: Slow Cooker Split Pea Soup (Gluten & Dairy Free)

My husband loves split pea soup, the kind that's thick and has pieces of ham.This winter has been so long and cold that it's been the perfect weather for simple comfort foods like soups and stews, and I've been making a lot of them. I make this soup when we have leftover cooked ham.

The flavour is the best when cooked with a ham hock or some bones, but it works fine without for a delicious vegan soup. I cook mine in the slow cooker, but it could be cooked in a pot on the stove as well.

This soup freezes well, so I often double the recipe and freeze half in freezer bags that I store flat in the freezer. The soup will need a bit of liquid added to it once defrosted, as the peas continue to absorb liquid.

Gluten Free Weekly Meal Plan: February 10-14, 2014



Monday: Veggie Kebabs & Savoury Quinoa  (Quinoa: 2 cups broth, 1 cup quinoa, 1 cup frozen mixed veggies. Bring to a boil, then simmer for about 12-15 min. Season. Simple.)

Gluten Free Weekly Menu Plan

Last week my son fell and knocked a tooth loose, so the doctor prescribed a soft food diet for a while. Not mushy, but just softer on the teeth.  That means that this week's menu plan is full of foods that are easy to eat, but still delicious. This week's recipes are internationally inspired, and full of incredible flavours. I hope you enjoy!







Monday: Thai Curry Vegetable Stir Fry over Rice Noodles 
(I used Summer Fresh's Thai Curry Sauce and poured it over a medley of mixed vegetables. cook the rice noodles separately and add them in at the end.)
